Not sure the style of blade needs to be a powered up high tech blade. I would have thought a chiefs knife would be a better idea, but not sure how/if the tech can scale like that.

Oh, also. Knife shape.  You relly should have gone for a chefs knifes shape rather then the pairing knife profile.  It would just be more useful.

Concerned about wearing out…. If it is cutting 50k times how fast will the blade dull? How many re-sharpingings until that tinny pairing knife is gone?

I'm not sold ultrasonic would make a good kitchen knife… also my kitchen is a rough place… how will that tech stand up after it is dropped a half dozen times,  falls in a sink, or a pot of watter?  How will the steal sharpen?
